After a long night of fasting Рbreakfast (which merely means breaking that fast) helps kick-start our metabolism and fuels our bodies and brains with energy. With these 10 instant healthy breakfast ideas that can be prepared in under 5 to 20 minutes, your mornings can be a tasty treat!

Skipping breakfast can make us more irritable and less focused, resulting in lower productivity. Let’s face it. There’s nothing worse than that nagging awareness of being hungry and counting down the minutes until our next meal.

Meanwhile, a good breakfast not only fuels us but also improves our ability to focus on the tasks at hand. Breakfast foods are excellent sources of essential nutrients such as iron, calcium, and B vitamins. They are also very rich in protein and fiber.

They only take a few minutes to prepare and can be cooked in a batch and refrigerated when you need to grab and go. The concept is as simple as making an omelet. Whatever ingredients you like using in your omelet, you can use it for this recipe.

Some of my personal favorites include spinach, bacon, chopped peppers, kale, asparagus, tomatoes, and cheddar cheese.

Here is a recipe which can be customized to suit your taste:

Ingredients

• 1/2 dozen eggs and various combinations of the following
• Chopped spinach
• Chopped Kale
• Diced tomatoes
• Diced mushroom
• Cheddar cheese
• Crumbled goat cheese
• Chopped red or green bell peppers
• Pepper and salt to taste

Method

Spray a muffin tin with cooking spray and set aside. Preheat oven to 350 degrees F.
Give the eggs a thorough whisk in a bowl. Place 2-3 of your favorite ingredients from the above list into the tin. You can try several combinations at the same time or stick to your choice.

Pour the eggs on top until the muffin tin is ¾ full, to leave the egg room to rise.
Place in the oven for 20 minutes or until each frittata passes the toothpick test. Remove the tray from the oven.

Use a knife to separate the egg cups from the tin edge. Serve right away or refrigerate for up to 6 days.
