Breakfast is the most important meal of the day. Sounds cliché, I know, but research has found this to be a statement of fact. After a long night of fasting – breakfast (which merely means breaking that fast) helps kick-start our metabolism and fuels our bodies and brains with energy.
Skipping breakfast can make us more irritable, and less focused, resulting in lower productivity. Let’s face it. There’s nothing worse than that nagging awareness of being hungry and counting down the minutes until our next meal.
Meanwhile, good breakfast not only fuels us but also improves our ability to focus on the tasks at hand. Breakfast foods are excellent sources of essential nutrients such as iron, calcium, and B vitamins. They are also very rich in protein and fiber.
It all sounds well and good, but the reality is that most of us are so busy that we usually push off breakfast off our morning to-do list. Even when we attempt to have it, it’s usually an unhealthy, sugar-filled quick fix that will only leave us hungry a few minutes later.

1. Low-Carb Egg Muffins
These are my family’s favorite. They only take a few minutes to prepare and can be cooked in a batch and refrigerated for when you need to grab and go. The concept is as simple as making an omelet. Whatever ingredients you like using in your omelet you can use for this recipe. Some of my personal favorites include spinach, bacon, chopped peppers, kale, asparagus, tomatoes and cheddar cheese. Here is a guide recipe which can be customized to suit your taste:
• 1/2 dozen eggs and various combinations of the following
• Chopped spinach
• Chopped Kale
• Diced tomatoes
• Diced mushroom
• Cheddar cheese
• Crumbled goat cheese
• Chopped red or green bell peppers
• Pepper and salt to taste
Spray a muffin tin with cooking spray and set aside. Preheat oven to 350 degrees F.
Give the eggs a thorough whisk in a bowl. Place 2-3 of your favorite ingredients from the above list into the tin. You can try several combinations at the same time, or stick to your choice. Pour the eggs on top, until the muffin tin is ¾ full, to leave the eggs room to rise.
Place in the oven for 20 minutes or until each frittata passes the toothpick test. Remove the tray from the oven. Use a knife to separate the egg cups from the tin edge. Serve right away or refrigerate for up to 6 days.
2. 60 Seconds Cheese & Sausage Omelet
You can have it ready in one minute, and it’s delicious and filling.
• 1 tbsp milk
• 1 egg, beaten
• 2 tbsp of fully cooked sausage crumbles
• 2 tbsp grated cheddar cheese
Beat the egg and milk in a bowl until blended then add sausage. Microwave on high for 30 seconds and push any uncooked eggs to the center of the bowl and cook for 15 more seconds. Keep cooking at 10-second intervals until the egg is properly cooked. Sprinkle with 1 tbsp of cheese. Fold the omelet in half and sprinkle with remaining cheese.
3. One-Minute Microwave Ham & Egg Breakfast Bowl
This is another quick and delicious recipe that can become your family’s favorite. It is easy to make as well.
• 1 ounce of thinly sliced deli ham
• 1 egg, beaten
• Shredded cheddar cheese
Line the bottom of an 8-oz ramekin or custard cup with ham, fold ham in half, if necessary. Pour the egg over the ham. Microwave at high for 30 seconds. Keep cooking at 10-second intervals until the egg is cooked correctly. Top with shredded cheese and serve.
4. Nutty Banana Toast
Kids and teenagers love this recipe, and adults favor it as well, if not for its delicious taste, then for how easy it is to prepare.

• Two tablespoons natural nuts butter, such as peanut, almond or hazelnut
• A pinch of salt
• 1 teaspoon of honey
• Pair slices of multigrain or wheat bread toasted
• 1 banana, sliced
Stir together honey, nut butter, and salt in a small bowl. Spread the mixture on the toast and top with banana slices.
5. Strawberry Oatmeal Breakfast Smoothie
Light, sweet, flavorful, and filling, this recipe is a beautiful start to any day.
• 1 cup soy or almond milk
• 1/2 cup quick oats
• 1 banana, crushed into chunks
• 10 frozen strawberries
• 1/2 teaspoon vanilla extract
• 1 Tbsp honey
Add all ingredients to a blender and blend until smooth. Serve immediately.
6. Avocado smoothie
Avocado is a superfood, so any recipe that includes it should be worth trying, especially when it’s as quick and straightforward as this one.
• 1 ripe avocado peeled and pitted
• 1/2 cup almond milk
• 1 ripe mango, banana or any other fruit of your choice
Scoop the avocado with a spoon into a blender, add the rest of the ingredients, and blend until smooth. Serve immediately.
7. Avocado Toast with Egg
This avocado recipe is not only easy to make but also tasteful and flavorful.
• 2 slices of whole-grain bread
• 1 avocado, smashed
• 2 eggs, scrambled or fried
Lightly toast the bread. Then spread each slice with ½ of smashed avocado. Top with an egg that has been scrambled or fried, and you have a delicious breakfast for two that combines protein, healthy fats, and good carbohydrates, to give your brain and body the boost it needs.

9. Peanut Butter and Jelly Waffle Sandwiches
Try this yummy classic breakfast idea for your next quick eat on the go, and you won’t be able to conceive starting the day without it.
• 4 hot waffles
• Peanut butter
Evenly spread peanut butter on 2 hot waffles. Spread jelly on 2 other halves. Place the jelly spread waffles on top of the peanut spread waffles. Slice in half and garnish with fruit. Enjoy!
10. Spinach and Cheddar Microwave Quiche
Quiche in a microwave? Yup, it’s possible and easy too.
• ½ cup of spinach
• 1 egg
• 1 handful of chopped bacon
• 1 handful of shredded cheese
• 1 splash of milk
Cover the spinach with water in a mug and microwave for 1 minute. Drain the water, and add an egg, shredded cheese, milk, and a handful of chopped bacon. Mix thoroughly, then microwave for three more minutes. You can eat it right away or leave it for later.
